First Harvest: 3 Cukes

Our very first harvest of 2018, three cucumbers. Going to make a cuke-onion-sprout vinegar ‘salad.’ Literally so good and so easy.


2 cucumbers
1 yellow onion
1 handful of mung bean sprouts
White vinegar


  1. Slice the cucumber and onion. Grab handful of mung bean sprouts. Place all in bowl with sealable top.
  2. Mix sugar and vinegar to taste (about 1/4 cup). Pour over salad, add top and shake. Serve chilled.
