Our very first harvest of 2018, three cucumbers. Going to make a cuke-onion-sprout vinegar ‘salad.’ Literally so good and so easy.
1 yellow onion
1 handful of mung bean sprouts
- Slice the cucumber and onion. Grab handful of mung bean sprouts. Place all in bowl with sealable top.
- Mix sugar and vinegar to taste (about 1/4 cup). Pour over salad, add top and shake. Serve chilled.
