Enjoying my first batch of fresh salsa from the garden tonight, along with a Cosmo, as I celebrate the last day of Summer Break. M returns to school tomorrow – as a Freshman in High School. Say whaaaaaaa? My salsa recipe: Pick as much from garden as possible. Chop tomatoes, onions, jalapeƱos and cilantro into thick chunks and mix together. Add black beans and corn (fresh or from can). Add lemon juice, salt, pepper, garlic salt and cayenne pepper or crushed red pepper to taste....

I love our little place. We built our garage/apartment as a temporary living space to get us here while we build the house. It’s small but it’s summertime and perfect for the three of us. Eventually it will become a party barn/gathering place for friends. Our fire pit is adjacent for barbecues. We walk 10 steps to tend to the garden each morning. The house is going up...

I adapted this recipe from one I found from Kathryn Budig. Hers had a lot more ingredients and no cheese but I like mine better because of taste and ease in making it. Admittedly, I’m boiling many nutrients out of this dish by making it the consistency that it is – into a ‘mashed potato’ texture, but I love it. In the end, it’s better than fast food (and most regular restaurants) anyway. Boil cauliflower & broccoli Mash Blend in favorite Season and serve I add Everglades seasoning to it when I serve it....
